Cooking using only one pan is probably one of my favorite ways of cooking. Less dishes is always better, especially when the meal turns out as good as this one! These scallops seared in bacon grease and smothered in a bacon cream sauce are every seafood lovers dream come true! These little bites of heaven are seriously so good, I was sad that I only got to eat four.
The good news is I had ton of bacon cream sauce left over, so I plan to use it on some pasta. I have a feeling it is going to be just as good in that dish! In addition, since none of strips of bacon are actually in the sauce, I like to crumble them up and put them on salads. I personally love making this BLT salad with homemade avocado vinaigrette :).
- 8 slices bacon
- 8 sea scallops
- 1 tsp pepper
- 1 tbsp butter
- 2 tbsp flour
- 1 tbsp chives
- 1½ cup heavy whipping cream
Cook bacon in pan and leave all grease behind. Bacon itself isn't in the recipe, I usually crumble the bacon and save it for future salads!
Pepper both sides of the scallops and sear 2-3 minutes each side in the bacon grease.
Remove scallops and add butter, flour, and chives. Allow to cook down for about 5 minutes.
Whisking constantly, gradually add cream to pan until sauce is thick.
Serve sauce with scallops and enjoy!
